20 Minute- Sesame Ginger Chicken

This has been a go-to in my kitchen lately, and only requires a few ingredients you probably have at home already!
Ingredients:
One pound of chicken thighs
2 TBSP avocado oil or butter
2 TBSP sesame oil
~3 TBSP coconut aminos (or soy sauce)
1-2 TBSP fresh grated ginger
Salt/pepper
Directions:
Heat up a fry pan on medium/ high heat
Add sesame and avocado oil to pan and heat up, add fresh ginger.
Next, add chicken thighs so they are laying flat in the pan, season with salt and pepper
Add coconut aminos over chicken and let chicken fry with out moving it (will allow a nice crust to form on chicken)
Check chicken after a few minutes (I usually check about 5-7 mins in), by peeling up a corner of a piece to see if it looks golden brown. If so, flip it over. Otherwise let it go for a few minutes longer, checking every minute or two
Cook chicken on the other side, adding more oil or coconut aminos as needed if pan starts to dry out
Once chicken is cooked through it is ready, serve with other sides. (Pictured is quinoa and roasted veggies)
